Happy Mother’s Day!

What I Ate:

In honor of Mother’s Day, I fixed a luncheon for Mama and Grandmama. Mama and Daddy are having their kitchen renovated and are currently without counter tops, oven, stove, and sinks installed so they’ve been eating take out and microwaved foods. I thought it would be nice to bring some homemade and fresh foods to celebrate the matriarchs of the family.

I am very blessed with a Mama who is so selfless and loving. She works so hard at everything she does and is an inspiration for me. I hope to grow into a woman who puts others before my self as she does, and into a mama who makes being a kid fun and being her adult daughter like a best friend. She is the best mama a girl could ask for and I am thankful for her love and support every day. Mama, thank you for being you and for being someone I look up to and a model of a loving and excellent parent!

Grandmama is also a role model for all of us grandkids. She never, ever forgets a birthday, anniversary, doctor’s appointment– anything important or special happening in someone else’s life (If we are friends, I know you know I did not inherit this quality and I’m very sorry you got stuck with a friend who can’t remember diddly-squat!). She is selfless in her love of others and is known for her service towards those who are in need. Grandmama is a remarkable lady and I am thankful and blessed to be her granddaughter; to learn from her and to watch her live out a life of unselfish care to others.

We ate:

Dijon Deviled Eggs

Creamy Pesto Roll-ups

Cranberry Almond Chicken Salad Rolls

Dill Cucumber Salad

Grilled Vegetable Cous Cous Salad

Margarita Cupcakes  (which I tried to frost like Hydrangeas, but was out of frosting bags and my ziplock bags kept busting open so they are not too cute)

We ate out on the porch at Grandmama’s house because the weather was absolutely perfect! We had a really nice time and ate until we were all stuffed!

Would you like any of these recipes? They’re all very simple and travel well! I think this menu would work well for a shower of some kind or any summer luncheon.

Happy Mother’s Day to all of you mamas out there–whether your kids are of the 2 or 4-legged variety! I hope you have had a wonderful day full of fun, relaxing, and eating of good food!
